Veal Patties

Ingredients

  • 4 green onions
  • 1/4 c. fresh basil leaves
  • 1 egg white, beaten
  • 1/2 lb. ground veal
  • 1/3 c. fine bread crumbs
  • 3/4 c. evaporated skim milk
  • 1/2 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1/4 tsp. pepper
  • 1 Tbsp. olive oil
  • 1 Tbsp. flour
  • 1 c. low-fat chicken stock

    Chop onions.

    Mince basil.

    Add green onions and half of basil to beaten egg whites.

    Stir in veal, bread crumbs and 1/4 cup milk.

    Add nutmeg, allspice and pepper.

    Make patties.

    Brown in olive oil.

    Remove to plate and keep warm.

    Combine 1/2 cup milk and flour; blend.

    In skillet, add chicken stock and bring to a boil, stirring browned bits from bottom of pan.

    Stir in flour mixture; cook 2 minutes.

    Stir in remaining basil.

    Return patties to skillet.

    Cook two minutes until hot.

    Good with brown rice and green vegetable.
