Ingredients

  • 1 cup water or beer
  • 2 cups raisins
  • 1 cup brown sugar packed
  • 1 cup butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 2 cups cake flour
  • 1 teaspoon double-acting baking powder
  • 1 teaspoon baking soda
  • 1 cup chopped nuts
  • 1 cup dried fruits chopped, or apples
  • 1 1/4 cups confectioner's sugar
  • 1/4 cup lemon orange or lime
  • 1 teaspoon vanilla extract

Directions

    Heat oven to 325 degrees. Boil first 8 ingredients together for 3 minutes. Allow to cool. Sift cake flour before measuring; re-sift with baking powder and soda. Stir flour mixture gradually into other mixture. Add chopped nuts and fruit. Bake in greased tube pan for 1 hour. When cool, sprinkle with powdered sugar or ice with a citrus glaze.
