  • 1 cup peas, shelled
  • 100 g pumpkin, thinly sliced
  • 1 large tomatoes, thinly sliced
  • 50 g cheddar cheese, grated
  • 2 slices bread, crumbed
  • 1 egg, lightly beaten
  • 1 cup milk

Directions

    Press peas over the base of two individual one cup ovenproof dishes.

    Cover with a layer of pumpkin, then the tomato.

    Mix together the remaining ingredients and pour over the vegetables.

    Bake at 180C for 30 minutes or until set and golden brown.
