Vegetable Beef Soup

  • 5 or 6 lbs. Soup Bones
  • 3 lbs. Stewing Beef
  • 2 Potatoes, diced
  • 4 Carrots, diced
  • 2 Onions, chopped fine
  • 1 c. Peas
  • 1 c. Cooked String Beans
  • 1 c. Lima Beans
  • 2 Tbsp. Uncooked Macaroni, Rice or Barley

Directions

    Place the meat and bones into a large soup kettle, cover with water, bring to a boil and simmer for about 5 hours.

    After the first two hours season with bay leaf, salt and pepper.

    After cooked until tender, cool and cut meat into small pieces and strain the broth.

    Add the rest of the ingredients and cook for an additional two hours.
