Ingredients

  • 2 cups basmati rice
  • 1 onion
  • 1 teaspoon garlic paste
  • 3/4 green chillies
  • 1 cup potato [can be, beans,carrot,cauliflower,green peas,baby corn]
  • mint leaves handful
  • cilantro handful
  • 2 teaspoons garam masala
  • 1 teaspoon fennel powder
  • pepper powder-1 tsp, add this only if you love extra spicy biriyani
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon water
  • 1 bay leaf
  • salt as needed
  • 4 tablespoons oil
  • 3 cups water you can also use, only

Directions

    Heat the oil/ghee in a pan and add bay leaves.

    Add onion in it and wait till it become golden brown.

    Add the ginger garlic paste and green chilly and fry till the raw smell vanish

    fry the finely chopped mint and cilantro leaves
  5. 5
    Add the garam masala powder ,turmeric powder ,fennel powder and pepper powder .

    Add all the vegetables and fry for a minute

    Add the rice and fry for a minute

    Transfer everything to a rice cooker.Add the coconut milk-water mixture ,lemon water and required salt.

    Cook till the rice is done.Garnish with some more cilantro and/or cashews .

    Vegetable biriyani ready to serve.

    Salad or potato fried will be excellent with it.
