  • 3 Tbsp. butter
  • 1 large onion, chopped
  • 2 yellow squash
  • 2 zucchini
  • 1 lb. fresh mushrooms, sliced
  • 1 lb. fresh green beans, cut
  • 3 to 4 tomatoes, cut up
  • parsley and garlic

Directions

    In large pot, saute butter and onion.

    Cut up vegetables and add to butter and onion.

    Cook, covered, until done.

    Put vegetables in large casserole; sprinkle with Mozzarella cheese. Bake at 350°

    for 20 minutes or until cheese melts.

    Serve and enjoy.
