  • 4 carrots
  • 1 stalk celery
  • 1 clove garlic
  • 2 small onions
  • 3 potatoes, peeled
  • 3 tomatoes, peeled
  • 1 c. boiling water or bouillon
  • salt and pepper to taste

Directions

    Cut carrots, celery, onions, garlic and potatoes into very thin slices.

    Cut tomatoes in wedges.

    Fill baking dish with vegetables, bouillon and seasonings.

    Cover; bake at 400° for 40 to 45 minutes.

    Remove cover.

    Bake 15 more minutes or until vegetables are tender.
