Vegetable Casserole

  • 1 (16 oz.) frozen vegetables (California Blend)
  • 1 small can water chestnuts, drained
  • 1 tube Ritz crackers, crushed
  • 1 stick butter or margarine, melted
  • chunks of Velveeta cheese

Directions

    Cook vegetables slightly and drain well.

    Place in baking dish and add water chestnuts (I slice them).
  3. 3
    Add chunks of Velveeta cheese (probably about 1/2 pound, I never measure).

    Add 2 tablespoons of melted butter to vegetables.

    Mix remaining butter with crushed crackers and place over vegetables.

    Bake at 325° for 30 minutes.
