  • 4 c. peeled, seeded and chopped tomatoes
  • 1 1/2 c. cubed avocado
  • 1 c. chopped green onions
  • 1/4 c. fresh lime juice
  • 1 Tbsp. chopped jalapeno pepper
  • 8 (6-inch) flour tortillas
  • 2 c. (8 oz.) shredded low-fat Monterey Jack cheese
  • 1/2 c. nonfat sour cream
  • chopped tomatoes (optional)
  • fresh sprig of cilantro (optional)

Directions

    Combine first 6 ingredients in a medium bowl; stir well and set aside.

    Place tortillas on a baking sheet coated with vegetable cooking spray.

    Top each tortilla evenly with 1/4 cup cheese. Bake at 400° for 1 1/2 minutes or just until cheese melts.
