- 4 c. peeled, seeded and chopped tomatoes
- 1 1/2 c. cubed avocado
- 1 c. chopped green onions
- 1/4 c. fresh lime juice
- 1 Tbsp. chopped jalapeno pepper
- 8 (6-inch) flour tortillas
- 2 c. (8 oz.) shredded low-fat Monterey Jack cheese
- 1/2 c. nonfat sour cream
- chopped tomatoes (optional)
- fresh sprig of cilantro (optional)
Directions

1Combine first 6 ingredients in a medium bowl; stir well and set aside.

2Place tortillas on a baking sheet coated with vegetable cooking spray.

3Top each tortilla evenly with 1/4 cup cheese. Bake at 400° for 1 1/2 minutes or just until cheese melts.
