  • 1 Tbsp. oil
  • 1 large onion, chopped
  • 1 (28 oz.) can whole tomatoes, drained and chopped
  • 2/3 c. picante sauce (mild)
  • 1 1/2 tsp. cumin
  • 1 1/2 tsp. chili powder
  • 3/4 tsp. salt
  • 1 large red or green pepper, chopped
  • 1 large zucchini, chunked
  • 1 c. frozen whole grain corn
  • 1 can pinto beans, drained

    Heat oil.

    Add onion and saute for 2 to 3 minutes.

    Add tomatoes, picante sauce, chili powder, cumin and salt.

    Cover and cook or simmer for 10 minutes.

    Add beans, pepper, corn and zucchini.

    Cover and simmer for 15 to 20 minutes or until zucchini is tender.
