- 1 Tbsp. oil
- 1 large onion, chopped
- 1 (28 oz.) can whole tomatoes, drained and chopped
- 2/3 c. picante sauce (mild)
- 1 1/2 tsp. cumin
- 1 1/2 tsp. chili powder
- 3/4 tsp. salt
- 1 large red or green pepper, chopped
- 1 large zucchini, chunked
- 1 c. frozen whole grain corn
- 1 can pinto beans, drained
Directions

1Heat oil.

2Add onion and saute for 2 to 3 minutes.

3Add tomatoes, picante sauce, chili powder, cumin and salt.

4Cover and cook or simmer for 10 minutes.

5Add beans, pepper, corn and zucchini.

6Cover and simmer for 15 to 20 minutes or until zucchini is tender.
