Vegetable Egg Fajitas

- 6 eggs
- 1/3 cup Milk
- 1 tbsp margarine or butter
- 1 medium bell pepper, cut into 1/4 inch strips
- 1 medium onion, thinly sliced
- 4 flour tortillas
- 1 tbsp fajita seasoning
- 1/2 cup salsa, medium
Directions

1beat eggs and milk with fork, set aside

2in a skillet, melt margarine over medium high heat.

3cook bell pepper, onion, and seasoning in margarine for about 4 minutes , stirring occasionally , until vegetables are tender.

4removed from heat, keep warm

5reduce heat to medium, pour egg mixture into skillet .

6as mixture begins to set at bottom, gently life cooked portions with spatula so that thin, uncooked portions can flow to bottom.

7avoid constant stirring

8cook 3 to 4 minutes or until eggs are firm but still moist

9spoon one fourth of egg mixture onto center of each tortilla, top with vegetables.

10fold right and left sides of tortilla over mixture, overlapping.

11Top each fajita with salsa before serving.
