Vegetable Fish Bake

Ingredients

  • 1 lb. fresh or frozen fish fillets
  • 3 Tbsp. lemon juice
  • 1/2 tsp. paprika
  • 1/2 c. fresh mushrooms, sliced
  • 1/4 c. chopped tomato
  • 1/4 c. green pepper, chopped
  • 1 Tbsp. fresh parsley, chopped
  • pepper to taste
  • lemon wedges
  • vegetable oil spray

Directions

    If fish is frozen, thaw.

    Cut fish into 4 portions and place in non-stick sprayed baking dish.

    Sprinkle with lemon juice and paprika.

    Combine mushrooms, tomato, green pepper, parsley and pepper.

    Spread over fish.

    Cover and bake for 25 minutes at 350°. Serve with lemon wedges.
