Vegetable Fish Bake

- 1 lb. fresh or frozen fish fillets
- 3 Tbsp. lemon juice
- 1/2 tsp. paprika
- 1/2 c. fresh mushrooms, sliced
- 1/4 c. chopped tomato
- 1/4 c. green pepper, chopped
- 1 Tbsp. fresh parsley, chopped
- pepper to taste
- lemon wedges
- vegetable oil spray
Directions

1If fish is frozen, thaw.

2Cut fish into 4 portions and place in non-stick sprayed baking dish.

3Sprinkle with lemon juice and paprika.

4Combine mushrooms, tomato, green pepper, parsley and pepper.

5Spread over fish.

6Cover and bake for 25 minutes at 350°. Serve with lemon wedges.
