- 1/4 c. egg substitute
- 2 Tbsp. rice wine or dry white wine
- 2 Tbsp. low sodium soy sauce
- 1 Tbsp. water
- 1/8 tsp. pepper
- nonstick cooking spray
- 1 c. loose-pack frozen green beans, thawed and well drained
- 1 c. sliced fresh mushrooms
- 1/2 c. bias-sliced celery (1 stalk)
- 1 small onion, halved and sliced (1/3 c.)
- 1/2 (8 oz.) can bamboo shoots, drained (1/2 c.)
- 2 c. chilled cooked rice (cooked without margarine or salt)
- 2 Tbsp. unsalted dry roasted peanuts, coarsely chopped (optional)
