- 180g cooked vegetables eg. zucchini, sliced into thin strips, blanched broccolini stems, roasted red capsicum strips
- 4 eggs
- 1/2 cup cream
- 1/4 cup plain flour
- salt and pepper, to taste

- Green salad, to serve
Directions

1Place the vegetables evenly into the base of a heated, non-stick 22cm frypan and heat through for 1-2 minutes.

2Whisk together the eggs, cream, flour and seasonings, pour over the vegetables and top with Singles*.

3Cover the pan with a lid, and cook over a medium-low heat for 10 minutes, or until the frittata is cooked through.

4Serve immediately with a crisp green salad.
