  • 180g cooked vegetables eg. zucchini, sliced into thin strips, blanched broccolini stems, roasted red capsicum strips
  • 4 eggs
  • 1/2 cup cream
  • 1/4 cup plain flour
  • salt and pepper, to taste

  • Green salad, to serve

Directions

    Place the vegetables evenly into the base of a heated, non-stick 22cm frypan and heat through for 1-2 minutes.

    Whisk together the eggs, cream, flour and seasonings, pour over the vegetables and top with Singles*.

    Cover the pan with a lid, and cook over a medium-low heat for 10 minutes, or until the frittata is cooked through.

    Serve immediately with a crisp green salad.
