  • 3 c. sliced fresh okra
  • 1 (16 oz.) can whole tomatoes, undrained
  • 1 1/2 c. water
  • 1 medium-size green pepper, seeded and chopped
  • 1 c. fresh or frozen lima beans
  • 1 c. fresh corn cut from cob
  • 1/2 c. chopped onion
  • 1 tsp. vegetable flavored bouillon granules
  • 1 tsp. chopped fresh parsley
  • 1/4 tsp. garlic powder
  • 2 tsp. olive oil
  • 4 oz. hot Italian turkey sausage, cut into 1/4-inch pieces
  • 4 oz. boneless, skinless chicken breast, cut into 1-inch pieces

  • 1/2 c. chopped onion
  • 1 garlic clove, minced
  • 1 1/2 c. canned crushed tomatoes
  • 1/4 c. clam juice
  • 1/4 c. low-sodium chicken broth
  • 1/4 tsp. dried basil
  • 1/8 tsp. garlic powder
  • 1/8 tsp. salt
  • dash of ground red pepper
  • 6 oz. fresh or dried spinach fettuccine, cooked and drained
  • 1 large shad
  • 3 strips bacon
  • 1 small onion

    You don't have to baste this recipe, just put in the oven.

    Set the timer for 5 hours at 300°.

    Place heavy foil in a large roaster; put in the shad.

    Salt and pepper to taste.

    Add a small diced onion and place 3 strips of bacon on shad.

    Wrap the foil tightly and bake.

    When ready to serve, just lift the shad out of the roaster and place on serving platter.

    Pull back the foil and crimp.
