  • 6 medium tomatoes, peeled and sliced
  • 4 cups fresh okra, cleaned and cut into 1/2-inch slices
  • 1 cup boiling water
  • 6 fresh mushrooms, sliced
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Hot cooked rice

Directions

    Saute onion in drippings in a Dutch oven over medium heat until tender. Add tomatoes, okra, and water. Cover; cook over low heat 30 minutes, stirring occasionally. Add mushrooms, garlic, salt, and pepper. Cover; cook 30 minutes, stirring occasionally. Serve with rice.
