  • vegetable cooking spray
  • 2 c. sliced fresh mushrooms
  • 1 c. lite Ricotta cheese
  • 2 eggs
  • 2 c. coarsely shredded carrot
  • 2 c. coarsely chopped zucchini
  • 9 cooked lasagna noodles (cooked without salt or fat)
  • 3 c. commercial no salt added spaghetti sauce
  • 1/2 tsp. salt
  • 1 c. shredded part-skim Mozzarella cheese

    Coat a medium skillet with cooking spray; place over medium heat until hot.

    Add mushrooms; cover and cook 5 minutes, stirring occasionally.

    Cook, uncovered, an additional 3 minutes or until liquid evaporates; set aside.
