  • 1 lb. lasagna noodles
  • 1 c. thinly sliced carrots and zucchini
  • 1 c. broccoli florets, cut small
  • 1 c. cauliflower florets, cut small
  • 29 oz. jar marinara sauce
  • 15 oz. cottage cheese or skim Ricotta cheese
  • 1/4 c. grated Parmesan cheese
  • 1/2 c. Mozzarella cheese

    Cook lasagna noodles until they are done; drain.

    Run under cold water and drain.

    Cook carrots and vegetables in steamer or boil until tender, around 8 minutes.
