- 3 tablespoons vegetable oil
- 2 each garlic cloves minced
- 1 large onions diced
- 1 each green bell peppers diced
- 2 each celery stalks diced
- 2 each carrots diced
- 1/2 pound mushrooms fresh, sliced
- 23 cup soy sauce, tamari
- 1 x salt to taste
- 1 teaspoon parsley leaves
- 1/4 teaspoon cayenne pepper
- 4 large potatoes boiled, mashed
- 1/4 cup soy milk
- 13 cup vegetable oil
- 3 tablespoons orange juice
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat flour
Directions

1Heat oil in a skillet Add the garlic and onions and saute for 3 minutes.

2Add the carrots, celery, green peppers and mushrooms and continue to saute for 5 minutes.

3Season well with the herbs and spices, including the tamari.

4Combine the mashed potatoes with the soy milk.

5Add the saute to the potato mixture.

6In a bowl, combine the oil, orange juice and salt.

7Gradually add the flour til lthe texture is moist and pliable.

8Roll the dough out on a floured board.

9Place rolled dough in a rectangular casserole so that the edges flop over the sides.

10Spoon the vegetables into the centre of the dough.

11Moisten the edges of the dough and seal into a loaf shape.

12Place on a cookie sheet or leave in the casserole, making sure that whatever you use is oiled to prevent sticking.

13Bake for 40 minutes at 375F (190C).

14Serve with vegetables on the side, such as mashed turnip, peas or beans, and cabbage.
