- 4 small yellow squash, sliced
- 2 medium zucchini, sliced
- 2 small onions, sliced and separated into rings
- 1/2 c. water
- 2 tomatoes, sliced
- 1 tsp. seasoned salt
- 1 tsp. dried whole basil
- 1 tsp. dried whole thyme
- 4 Tbsp. grated Parmesan cheese
Directions

1Combine first 4 ingredients in a skillet with a lid; bring to a boil.

2Cover; reduce heat and simmer 3 to 4 minutes.

3Add tomatoes, salt, basil and thyme and toss gently.

4Cover and simmer 2 minutes.

5Sprinkle with Parmesan cheese.

6Serve immediately.
