- 1/4 c. shredded carrots
- 2 Tbsp. oil-free Italian dressing
- 1/4 c. (1 oz.) fat-free shredded Mozzarella cheese
- 2 English muffins, split and toasted
- 1/4 c. alfalfa sprouts
Directions

1Combine first 4 ingredients; set aside.

2Sprinkle with cheese over English muffin halves.

3Broil 5 1/2 inches from heat for 1 minute or until cheese melts.

4Top each half with vegetable mix and sprouts.

5Serve immediately.
