  • 1 pound eggplant , ends trimmed, cut crosswise in 1/2-inch thick slices
  • 3 tablespoons olive oil
  • 1/2 cup ragu old world style pasta sauce
  • 3/4 cup part-skim mozzarella cheese shredded

Directions

    Preheat oven to 425°. Brush both sides of eggplant slices with olive oil. Arrange on baking sheet.

    Bake, turning once, until eggplant is tender, about 16 minutes. Remove from oven, then top with Pasta Sauce and cheese.

    Bake until cheese is melted, about 8 minutes.
