- 2 zucchini
- 2 summer squash
- handful of mushrooms, sliced
- 1 large onion, diced
- 2 bell peppers, chopped
- 2 large tortillas
- mild Cheddar cheese
- butter
Directions

1Saute zucchini, squash, mushrooms, onion and bell peppers just until crunchy.

2Layer 1 large tortilla on bottom of baking sheet, then cheese above vegetable mixture.

3Add more cheese and put tortilla on top.

4Brush with butter.

5Bake at 350° for 10 to 15 minutes and slice pizza style.

6Makes 4 quesadillas.
