Ingredients

  • 1 (10 oz.) pkg. frozen spinach or broccoli
  • 1 (12 oz.) pkg. frozen shredded hash browns
  • 3/4 c. shredded or grated Cheddar cheese
  • 1 1/2 tsp. salt
  • 1 c. whole kernel corn
  • 1/3 c. chopped onion
  • 1/2 tsp. pressed garlic
  • 2 Tbsp. butter or oleo
  • 3 eggs, beaten
  • 1 c. sour cream
  • 1/4 c. milk
  • 2 Tbsp. sliced pimiento

Directions

    Thaw spinach or broccoli, press, dry and chop.

    Set aside. Thaw potatoes, separate and mix with half the salt and half the cheese.

    Press over the bottom and the sides of a 9-inch pie pan. Bake in a 350° oven for 15 minutes.

    Remove from oven.
