  • venison steaks
  • flour and shortening
  • 1 Tbsp. vinegar
  • 1/2 c. chopped celery
  • 1/2 c. chopped apple
  • 1/2 c. chopped carrot
  • 1/4 c. chopped onion

    Cover steaks with flour and sear on all sides in shortening. Place steaks in ovenproof dish. Add enough water to cover the bottom of the dish. Add 1 tablespoon vinegar. Cover tightly and cook very slowly in 300° oven about 2 hours, adding a little more liquid as necessary. About 30 minutes before meat is tender, add celery, apple, carrot and onion.
