  • 5 to 6 eggs
  • 1 3/4 c. milk
  • 1 tsp. salt
  • dash of cayenne or red pepper
  • 1 lb. Swiss or Colby cheese
  • 2 or 3 Tbsp. flour
  • 1/4 c. chopped broccoli
  • 1/4 c. shredded carrots
  • 1/4 c. chopped onion
  • 1/4 c. chopped zucchini
  • 2 pie shells (unbaked)

Directions

    Mix well eggs, milk and seasonings.

    Toss cheese with flour; add to milk mixture.

    Mix; add vegetables.

    Mix and pour in pans. Bake at 350° for 45 to 50 minutes.
