  • 1 c. cooked brown rice
  • 1 c. cooked no-yolk noodles
  • 3/4 c. egg substitute
  • 3/4 c. shredded low-fat Mozzarella cheese, divided
  • 1 1/2 c. chopped fresh broccoli
  • 3/4 c. sliced fresh mushrooms
  • 1/4 c. skim milk
  • 1 Tbsp. canola oil
  • 1 unbaked crust

Directions

    In bowl, combine rice, cooked noodles, 1/4 cup egg substitute and half the cheese.

    Mix well.

    Pat into bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray; set aside.

    In another bowl, combine broccoli, mushrooms, milk, oil and remaining egg substitute.
