- 1 c. cooked no-yolk noodles
- 3/4 c. egg substitute
- 3/4 c. shredded low-fat Mozzarella cheese, divided
- 1 1/2 c. chopped fresh broccoli
- 3/4 c. sliced fresh mushrooms
- 1/4 c. skim milk
- 1 Tbsp. canola oil
- 1 unbaked crust
Directions

1In bowl, combine rice, cooked noodles, 1/4 cup egg substitute and half the cheese.

2Mix well.

3Pat into bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray; set aside.

4In another bowl, combine broccoli, mushrooms, milk, oil and remaining egg substitute.

5Pour into crust.
