Ingredients
- 1 c. chopped onion
- 1 c. finely chopped carrot
- 1 c. finely chopped celery
- 3/4 c. finely chopped sweet red pepper
- 1/2 c. finely chopped green pepper
- 2 cloves garlic, minced
- 2 1/3 c. water
- 1 tsp. Cajun seasoning
- 1 1/3 c. long grain rice, uncooked
- 2 Tbsp. chopped fresh parsley
Directions

1Coat a large nonstick skillet with vegetable cooking spray; place over medium-high heat until hot.

2Add onion and next 5 ingredients; saute 3 to 4 minutes or until tender.

3Remove vegetable mixture from heat; set aside and keep warm.

4Combine water and Cajun seasoning in a medium saucepan, stirring well. Bring to a boil.

5Stir in rice.

6Cover, reduce heat and simmer 20 to 25 minutes or until rice is tender and liquid is absorbed. Combine vegetable mixture and cooked rice in a large bowl.

7Add chopped parsley and toss gently to combine.

8Yields 4 cups.
