Vegetable Rice Mold

Ingredients

  • 1 1/4 c. uncooked long grain rice
  • 1 cucumber, peeled and chopped
  • salt (optional)
  • 1 large carrot, scraped and diced (optional)
  • 1 c. green beans, drained
  • 1 c. green peas, drained
  • 1 red pepper or green pepper, or both
  • 2 Tbsp. tarragon vinegar
  • 1/2 tsp. salt (optional)
  • 1/2 tsp. white pepper
  • 1/4 c. + 1 Tbsp. olive oil
  • lettuce leaves

Directions

    Cook rice according to package directions.

    Combine vegetables and heat for a few minutes.

    Combine with rice.

    In a separate container, combine next three ingredients.

    Gradually add olive oil and stir until well blended.

    Pour over salad and toss gently. Spoon mixture into mold coated with vegetable cooking spray. Chill 10 minutes.

    Invert onto lettuce leaves.

    Garnish with tomato rose or sweet pepper flower.
