  • 1/2 onion - minced
  • 3 cloves garlic - minced
  • olive oil
  • 2 carrots
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 2 stalks celery
  • 1 small zucchini
  • 1 small summer squash
  • One 32-oz container vegetable broth
  • Aleppo pepper
  • Italian Seasoning
  • Thyme
  • Spicy seasoned salt
  • Pre-cooked white rice

Directions

    In a medium-sized pot, heat olive oil and sautee the onion and garlic until soft and fragrant.

    Chop all other vegetable and add to the pot.

    Add the vegetable broth and seasonings. Simmer approximately 1/2 hour.

    When done, stir in the rice and serve.
