- 1 zucchini
- 1 eggplant
- 2 small onions
- 1 red pepper
- 1 green pepper
- 3 tomatoes
- 1 vegetable oil
- 1 salt
- 1 black pepper
Directions

1Peel onions, eggplant and zucchini.

2Chop eggplant and zucchini (not too small) and reserve.

3Sprinkle some salt and mix.

4Chop onions and peppers.

5Blanch the tomatoes in order to peel the easily.

6Put oil in a pan to fry the onions and the peppers.

7Chop the tomatoes and reserve.

8Once the peppers and onions are half cooked add the zucchinis and the eggplant.

9Add more oil if needed.

10Add the tomatoes and stir.

11Season with salt and black pepper.

12(Tip) If you find it to acidic, add a bit of white sugar.
