Ingredients

  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups baby carrots, cut into bite sized pieces, peeled
  • 1 head celery heart, cut into bite sized pieces
  • 1 (8 ounce) package button mushrooms, sliced
  • 2 zucchini, cut into bite sized pieces
  • 1 (16 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teapsoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper
  • 2 cups frozen broccoli florets
  • 2 cups frozen spinach
  • parmesan cheese

Directions

    1, Heat a large stockpot over high heat. Spray with cooking spray.

    2. Add the oinion and saute for 2 minutes. Add the garlidc and saute for minutes more.

    3. Add everything else excpet for the broccoli, spinach, and parm cheese.

    4. Bring to a boil and then let simmer for 15 minutes.

    5. Add the broccoli and spinach and let cook another 5 minutes.

    6 Serve and top with cheese.
