- 1 Tbsp. vegetable oil
- 1/2 c. chopped onion
- 2 garlic cloves, minced
- 1 (16 oz.) can tomatoes, diced
- 1 c. low-sodium chicken broth
- 1 c. sliced carrots
- 1 c. sliced celery
- 1/4 c. chopped parsley
- 1 tsp. dried basil
- 1/8 tsp. pepper
- 1 c. frozen lima beans
- 1/2 c. water
Directions

1In medium saucepan over medium-high heat, heat oil.

2Add garlic and onion; cook 2 to 3 minutes, stirring.

3Add tomatoes with juice, chicken broth, carrots, celery, parsley, basil and pepper.

4Bring to a boil.

5Reduce heat; cover and simmer 20 minutes.

8Reduce heat; simmer 20 minutes.
