- 1 c. lentils
- 6 c. vegetable broth
- 3 c. chopped fresh tomatoes
- 2 stalks celery, chopped
- 1 large potato, diced
- 1 large onion, chopped
- 1 large carrot, chopped
- 2 Tbsp. fresh lemon juice
- 3 large cloves garlic, minced
- 2 bay leaves
- 1/4 c. minced parsley
- 1/2 tsp. savory
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- salt and pepper
Directions

1Bring to a boil in large saucepan lentils and vegetable broth. Add remaining ingredients.

2Reduce heat, cover and simmer 1 hour. Remove bay leaves and puree half of mixture and add to soup.
