Ingredients

  • 1 lb. pkg. mixed vegetables (use Birds Eye broccoli, carrots and cauliflower)
  • 8 oz. sliced water chestnuts
  • 1 c. chopped celery
  • 1 Tbsp. minced onion
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • crushed Ritz cracker crumbs
  • 1/2 stick oleo or butter, melted

Directions

    Combine and cook first 4 ingredients.

    Place in casserole dish which has been sprayed with Pam or buttered. Heat soup, sour cream, salt, pepper and another teaspoon minced onion and pour over vegetable mixture.

    Top casserole with crumbs which have been mixed with 1/2 stick butter or oleo.

    Bake at 350° until brown.
