Ingredients
- 1 medium onion, coarsely chopped
- 4 stalks celery, chopped
- 1/2 green pepper, chopped
- 4 diced carrots
- 1 small can whole kernel corn
- 1 (16 oz.) can pinto beans
- 1 (32 oz.) can chili beans with hot sauce
- 1 (28 oz.) can crushed tomatoes
- 1 Tbsp. chili powder
- 1 can kidney beans and/or black beans, drained and rinsed
Directions

1Saute onions and celery in 1 tablespoon oil.

2Add carrots, green peppers and then all other ingredients.

3Bring to a boil and reduce heat.

4Simmer for 20 to 30 minutes to blend flavors.

5Try this; low-fat and very good.
