Vegetarian Chili

Ingredients

  • 1 medium onion, coarsely chopped
  • 4 stalks celery, chopped
  • 1/2 green pepper, chopped
  • 4 diced carrots
  • 1 small can whole kernel corn
  • 1 (16 oz.) can pinto beans
  • 1 (32 oz.) can chili beans with hot sauce
  • 1 (28 oz.) can crushed tomatoes
  • 1 Tbsp. chili powder
  • 1 can kidney beans and/or black beans, drained and rinsed

Directions

    Saute onions and celery in 1 tablespoon oil.

    Add carrots, green peppers and then all other ingredients.

    Bring to a boil and reduce heat.

    Simmer for 20 to 30 minutes to blend flavors.
