- 1/3 c. margarine, melted
- 1 egg
- 2 tsp. water
- 1/2 c. flour
- 1/2 tsp. salt
- 2 c. fresh vegetables (broccoli flowerets, cauliflower flowerets, 1/4-inch carrot slices, 1/2-inch zucchini slices, etc.
Directions

1Heat oven to 450°.

2Brush bottom of 13 x 9 x 2-inch pan with about 1 tablespoon of the melted margarine.

3Beat egg and water in a shallow dish.

4Mix flour and salt in another shallow dish.

5Dip about 1/4 of the vegetables into egg mixture.

6Remove 1 piece at a time; roll in flour mixture to coat.

7Place in pan.

8Repeat with remaining vegetables.

9Pour remaining margarine carefully over each vegetable piece and into pan.

10Bake uncovered, turning once, until vegetables are crisp-tender and coating is golden brown, 10 to 12 minutes.

11Drain.

12Sprinkle with Parmesan cheese, if desired.
