- 2 (10 oz.) frozen spinach
- 2 c. sliced fresh mushrooms
- 1 c. grated carrots
- 1/2 c. chopped onion
- 1 Tbsp. oil
- 2 (8 oz.) cans tomato paste
- 1/2 c. sliced olives
- 2 c. cottage cheese
- 1 lb. Monterey Jack cheese
- 1/2 c. fresh Parmesan cheese
Directions

1Cook noodles in boiling, salted water for 8 to 10 minutes. Cook spinach; drain very well.

2Cook mushrooms, carrots and onion in oil until tender.
