  • minced garlic
  • Parmesan cheese
  • mushrooms (fresh wash bite size pieces; optional)
  • broccoli (fresh wash bite size pieces; optional)
  • carrots (fresh wash bite size pieces; optional)
  • zucchini (fresh wash bite size pieces; optional)
  • 1 (14.5 oz.) can diced tomatoes
  • 1 jar basil pesto (Classico or any kind)
  • 1 pt. heavy whipping cream
  • olive oil
  • 1 box bow tie pasta

Directions

    Put veggies in large skillet with a very small amount of olive oil (1 tablespoon). Cook on medium heat (covered) until veggies are tender, about 10 minutes. Add 2 or 3 tablespoons of basil pesto; add tomatoes and cook on medium for about 8 minutes. Add 1/2 tablespoon minced garlic. Add whipping cream and cook on medium heat just long enough to get the cream hot. Serve over any kind of pasta.
