- venison ribs
- 1 bottle liquid smoke
- black pepper to taste
- barbecue sauce
Directions

1Boil ribs in water until tender (this removes the fat).

2Take ribs from water and let cool.

3Marinate in liquid smoke 1 to 2 hours.

4Take out of marinade and sprinkle with pepper to taste. Prepare charcoal smoker to manufacturer's instructions.

5When coals ash over, liberally add hickory chunks.

6Fill drip pan with water and put ribs on and cook 1 hour per pound.

7When finished, remove and let cool.

8Brush sauce on ribs and refrigerate overnight.

9Next day, take out and when at room temperature, put on barbecue grill. When sauce sets up, ribs are ready.
