- 1 (5 lb.) venison roast
- salt and pepper to taste
- 6 (1/2-inch thick slices) salt pork
- 2 lemons
- 2 Tbsp. Worcestershire sauce
- 1 medium onion, chopped
Directions

1Remove all fat from venison roast; season with salt and pepper.

2Wash salt pork to remove excess salt.

3Line roasting pan with salt pork.

4Place venison roast in pan.

5Add the juice of 1 lemon, Worcestershire sauce, chopped onion and slices of remaining lemon.

6Cover.

7Bake at 325° for 2 to 3 hours or until done, adding hot water as needed.
