- 1 (4 to 5 lb.) venison roast
- 1 small bunch green onions, cut up
- 2 lb. potatoes (small)
- 1/2 c. Italian dressing
- 2 onions, chopped
- 2 strips bacon
- 5 cloves garlic, minced
- salt and red pepper
- 1/4 c. water
Directions

1Rub roast with liberal amount of salt and red pepper.

2Mix onions and garlic; sprinkle with salt and pepper.

3Use most of onions and garlic to stuff roast.

4Place roast in roasting pan. Pour Italian dressing over roast.

5Place green onions and remainder of onions and garlic on top of roast.

6Place bacon strips on top of roast.

7Cover roasting pan and marinate overnight.
