- 1/4 c. canning salt
- 2 Tbsp. liquid smoke
- 2 Tbsp. garlic powder
- 2 Tbsp. brown sugar
- 2 Tbsp. chili powder
- 2 tsp. crushed red pepper
Directions

1Mix all ingredients; cover and refrigerate for 2 days.

2Divide meat into 2 equal parts and roll in nylon net or make muslin bags and stuff.

3Bake in slow oven (225°) for 4 hours, turning occasionally.

4Cool.

5Remove netting.

6Freezes well.
