- 2 baking potatoes, peeled and cubed
- 2 tablespoons butter
- 2 leeks, white part only, chopped
- 2 cups chicken broth
- 12 teaspoon salt
- 18 teaspoon pepper
- 18 teaspoon nutmeg
- 12 cup cream
- 1 teaspoon chives, chopped
Directions

1Cook potatoes in a small amount of water until done.

2Saute chopped leeks in butter.

3Add 1 cup chicken broth and simmer 15 minutes, covered.

4Place all ingredients, except cream and chives in a blender for approximately 1 minute.

5Add cream and chives.

6Refrigerate.

7This also makes a good hot soup.
