  • 1 1/2 lb. plain corn meal
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 3 beaten eggs
  • 1/3 c. vegetable oil
  • 1 (7 oz.) can whole kernel corn, drained
  • 1 c. shredded Cheddar cheese
  • 2 to 4 baby Vidalia onions (bulbs and green tops chopped)
  • 1 c. chunky salsa sauce (hot or mild)
