- 1 1/2 lb. plain corn meal
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 c. milk
- 3 beaten eggs
- 1/3 c. vegetable oil
- 1 (7 oz.) can whole kernel corn, drained
- 1 c. shredded Cheddar cheese
- 2 to 4 baby Vidalia onions (bulbs and green tops chopped)
- 1 c. chunky salsa sauce (hot or mild)
Directions

1Sift dry ingredients together in a bowl.

2Stir in remaining ingredients.

3Mix well.

4Bake in greased muffin tins for 20 to 30 minutes at 350°.
