Vidalia Onion Cornbread

- 1 box Jiffy cornbread mix
- 1 egg
- 1/3 c. milk
- 1 large Vidalia onion
- 1 c. shredded sharp Cheddar cheese
- 1 c. sour cream
- 2 1/2 Tbsp. butter
- 1 1/2 tsp. salt
Directions

1In a bowl, mix Jiffy mix, egg and milk.

2Spread in bottom of an 8-inch pan.

3Set aside.

4Saut sliced Vidalia onion in butter until onions have a glazed look.

5Add sour cream, salt and half of cheese to onion mix.

6Spread evenly over cornbread mix in pan. Sprinkle remaining cheese over mixture.

7Bake at 325° to 375° for 30 minutes.

8Serve hot.
