  • 1/2 (1 lb.) pkg. noodles (medium)
  • 1/4 c. butter
  • 1 onion, finely chopped
  • 1 green pepper, cut in thin strips
  • 1 carrot, cut in thin strips
  • 1/2 lb. mushroom pieces, sliced
  • 1 medium tomato, diced and skinned
  • 2 Tbsp. flour
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1 c. chicken stock
  • 1/2 c. sour cream
  • 2 c. chicken, cut up and cooked

    Heat oven to 350°.

    Cook noodles; drain.

    Melt butter.

    Cook onion, pepper, carrot and mushrooms until tender.

    Stir in tomato, flour, paprika, salt and chicken stock; cook until thickened, stirring occasionally.

    Stir in sour cream, chicken and noodles. Turn into buttered 3-quart casserole and bake 20 minutes.
