Ingredients

  • 1 stick butter
  • 1 c. sugar
  • 2 eggs
  • 3 tsp. vinegar
  • 1 tsp. vanilla
  • 1/2 c. chopped pecans
  • zucchini, sliced in apple size slices
  • 2 Tbsp. lemon juice per pie
  • dash of cinnamon
  • a little salt
  • 1 unbaked pie shell
  • 1 stick margarine
  • 1 c. flour
  • 1 c. sugar
  • sprinkling of cinnamon

Directions

    Slice the zucchini in apple size slices; toss them in lemon juice.

    Add dash of cinnamon and a little salt.

    Pile the mixture into an unbaked pie shell.

    Top it with the margarine, flour, sugar and a sprinkling of cinnamon mixed together.

    Bake as you would for ordinary apple pie at 425° for 40 minutes.

    Cover the rims of your crust with aluminum foil if crust gets too brown.
