- 400 g whole wheat flour
- 100 g white flour
- 2 teaspoons salt
- 30 g flax seeds
- 1/2 teaspoon coriander
- 1/16 liter milk
- 250 g plain yogurt
- 40 g fresh yeast cakes
- 1 teaspoon sugar
- 30 g flax seeds
Directions

1Mix whole wheat flour and white flour together with 2 teaspoons salt, 30 gr. flax seed and 1/2 teaspoons coriander.

2Mix milk and joghurt together in a saucepan and warm. Add yeast and sugar, stir until completely combined.

3Pour milk mixture, little by little into flour and knead thoroughly. The dough will be very firm. (I ended up adding about 50ml more milk).

4Let dough rise, covered, in an oven set at 30°C for 2 hours. After 2 hours punch the dough down and knead once more. Form into a round loaf.

5Brush the loaf with water and sprinkle with the remaining flax seed. Press softly into dough.

6After you have shaped the dough into a loaf preheat the oven to 200°C Bake the bread on the middle rack for 50-60 minutes.

7This bread is very crusty.
