Waldorf Potato Salad

- 2 lbs baby new potatoes
- 3 oz baby arugula
- 3 stalks celery, trimmed, sliced
- 1 None green apple, decored, thinly sliced
- 4 oz pecans, toasted, halved
- None None Dressing
- 1/2 cup mayonnaise
- 1 oz chives, snipped
- 1 None lemon, finely zested and juiced
- 2 tsp wholegrain mustard
Directions

1Place potatoes in a large saucepan of salted water. Bring to the boil on high. Cook 15-20 mins, until tender. Drain well. Cool slightly then cut in half.

2Meanwhile, in a large bowl, combine arugula, celery, apple and pecans. Toss well.

3For the dressing, whisk all ingredients together and season. Toss with salad ingredients and war, potatoes to serve.
